Serve on jasmine rice with roasted vegetables on the side to make this yummy Indian dish a complete, tasty meal! Look for mild curry paste if you have children or other members of the family with tender tongues.
- 2 tbsp butter
- 1 tbsp ground cumin
- 2–3 tbsp yellow or red curry paste
- 1 tbsp fresh ginger, minced
- 1 cup tomato sauce
- ¾ cup coconut milk
- 8 skinless, bone-in chicken drumsticks and thighs (approx. 3 lbs)
Directions:
- Melt butter and pour in slow cooker. Stir in all ingredients except chicken.
- Season chicken with salt and pepper and add to sauce. Turn chicken to coat.
- Cook on high setting for 2 ½ hours or low for 5 hours.
